Roasted tomatillos Salsa

Roasted tomatillos Salsa:

1 pint tomatillos (outer husks removed)

1 large onion or two small onions, cut into quarters

2 cloves garlic, peeled

1 or two green bell peppers

1 jalapeno, cut in half (remove seeds if you don't want too much heat)

Juice and zest of 1 lime

salt and pepper

Method: place all vegetables on baking sheet, cut side down. Turn oven broiler onto high, and adjust oven rack a few inches below the top broiler elements in oven. Place sheet tray of veggies on top rack and broil for 2 minutes. After 2 minutes, rotate pan. Keep checking and rotating the pan every minute, and remove veggies once they're all lightly charred and blackened. At this point, you can let the veggies cool, picking off any especially charred skins, and then place in food processor with the zest and juice of the lime and a sprinkling of salt and pepper. Pulse until mostly smooth, with a few small chunks remaining. This can also be done while the veggies are hot. Taste for seasonings and add more salt as needed.
